However, for any reason, I keep trying it. I Need to enjoy it SO DANG BAD.

I enjoy these biscuits a little about the left handed side, so I bake them for 9 or 10 seconds. If you want them to be cooked through, I'd take for 10-11 seconds.

YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

1 1/2 tsp pure vanilla extract

1 cup pops flour

1 teaspoon baking soda

1 tsp salt

2 tsp ground cinnamon


Line baking sheets with parchment paper.

In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.

Scrape the sides of the bowl and blend in the egg until fully incorporated. Scrape the sides of the bowl again and add in the mashed bananas and vanilla.

Gently add the bread mixture to the banana mixture and blend until just blended.

Scrape the sides of the bowl and stir to recombine.

Use a moderate cookie scoop (about 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.

Bake in preheated oven for 9-11 minutes.

Remove cookies from the oven and then lightly press on the shirts of each cookie with the base of a drinking glass. Because these cookies do not spread considerably, this can give them a conventional cookie form.
