Today I want to chat about Kombucha. Which is obviously completely unrelated to these Banana Oatmeal Cookies, but I understand you won't obey.
Allow me to start off by stating that my husband drinks apple cider vinegar mixed with water daily to reduce inflammation or something like that.
He claims it's magical. I assert it's nasty.
While I understand this is going to seem spectacular (because it is)I actually dry heave at the sight and odor of the early ritual on a daily basis. He loves that about me.
Depending upon this response, one would think that I would stay far away from Kombucha, correct? I suggest, after all, it certainly comes with a vinegary tang.
However, for any reason, I keep trying it. I Need to enjoy it SO DANG BAD.

If you're not a fan of oatmeal biscuits my favourite chocolate chip biscuits, you may just become your new fave.
I enjoy these biscuits a little about the left handed side, so I bake them for 9 or 10 seconds. If you want them to be cooked through, I'd take for 10-11 seconds.

BANANA OATMEAL COOKIES
YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes
1/2 cup unsalted butter, at room temperature
1 cup packed light brown sugar
1 large egg
1 1/2 tsp pure vanilla extract
1 cup pops flour
1 teaspoon baking soda
1 tsp salt
2 tsp ground cinnamon
Line baking sheets with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat the butter and sugar until light and fluffy, about 3 minutes.
Scrape the sides of the bowl and blend in the egg until fully incorporated. Scrape the sides of the bowl again and add in the mashed bananas and vanilla.
Gently add the bread mixture to the banana mixture and blend until just blended.
Scrape the sides of the bowl and stir to recombine.
Use a moderate cookie scoop (about 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for 9-11 minutes.
Remove cookies from the oven and then lightly press on the shirts of each cookie with the base of a drinking glass. Because these cookies do not spread considerably, this can give them a conventional cookie form.
